Chicken Rice Tomato
Chicken with rice in a tomatois a recipe.
- 6 legs;
- 2 large sweet peppers;
- 1 large onion;
- 2-3 cloves of garlic;
- 250 grams of rice;
- 400 grams of tomatoes in their own juice;
- 2 tsp. ground sweet paprika;
- 1/3 tsp red hot pepper;
- 3 tbsp. vegetable oil;
- Salt to taste.
Cooking marinade. To do this, mix the butter, paprika, salt and pepper. We smeared with this mass the whole leg, previously cut into 2 parts each, covered with a lid and leave to marinate for 40-60 minutes.
While the chicken is marinated, chop finely onions and peppers, chop the garlic.
Fry the legs from both sides to a golden crust in oil (turn 2-3 times each piece).
Remove from the pan and set aside. Fry onion and garlic in the same pan for 3-4 minutes.
Add the chopped sweet pepper and fry for another 3 minutes. Add rice and keep on fire for another 5 minutes. Add mashed tomatoes in a saucepan along with the juice and 250 ml of water.
Put the chicken to the vegetables and rice in a saucepan, salt to taste and bring to a boil. Cover with a lid, reduce the heat and simmer until rice and chicken are cooked, about 25-30 minutes. If necessary, add water to the process.
