Eggplant Fried Eggs
You will need
- several small eggplants (or one large), three small tomatoes, greens, a clove of garlic, 150 grams of sour cream, grated cheese, a few tbsp. spoons of vegetable oil
The first step is to cook eggplants. To do this, place them for 10-15 minutes in the oven, as soon as they become soft - remove the skin and finely chop, after removing the seeds. While the eggplants are baked in the oven, shorten the time and prepare other ingredients. Cut onions as small as possible and fry in vegetable oil, in the process of cooking crushed eggplants are also added.
As soon as the mass is cooked, add chopped tomatoes, herbs, pepper (optional), garlic to the contents of the pan. Mix everything thoroughly and continue cooking over low heat. As a result, you should get ready eggplant caviar.
Separately prepare the second part of the dish - eggs, grated cheese and sour cream, mix with a whisk or fork.Put cooked eggplant caviar in an even layer into a container for baking and pour the egg mixture on top.
