How to pickle bitter mushrooms

How to pickle bitter mushrooms

This recipe is different using marinade and a more extensive list of ingredients:

  • 2 kg of mushrooms;
  • 4 onions;
  • 1 carrot;
  • 100 ml of vinegar;
  • 25 peppercorns;
  • 10 cloves;
  • 4 bay leaves;
  • 2 tbsp. l Sahara;
  • 2 tbsp. l salt.

Technology of pickling mushrooms:

  1. Mushrooms clean, cut, cover with water and clean in the cold for 3 days to soak. Change water twice a day.
  2. Boil the mushrooms until tender, drain the liquid, cool.
  3. For the marinade in a saucepan, pour 4 tbsp. water. Add there peeled and cut into large pieces of onion and carrot, cloves, pepper, bay leaf, salt and sugar. Bring to a boil and cook for 20 minutes.
  4. Add vinegar to the pan, put the mushrooms in and boil for another 10 minutes.
  5. Spread bitterbugs on sterile jars, pour marinade, cover with lids and store in a refrigerator or cellar.

Appetizer can be tasted in 2 months.Pay attention to make sure that all the bitterness is gone, after soaking, boil a few mushrooms and try them. If they are bitter, extend the soaking procedure for another day.
