Rice salad in baskets of sweet pepper
You will need
- - chicken (fillet) - 400 g;
- - rice (long) - 75 g;
- - sweet pepper (multi-colored) - 4 pcs .;
- - canned green peas - 250 g;
- - pitted olives - 20 pcs .;
- - olive oil - 100 ml;
- - vegetable oil - 3 tbsp. l .;
- - Vinegar 3% - 1 tbsp. l .;
- - mustard - 1 tsp;
- - Curry - 1 tbsp. l .;
- - salt - 0.5 tsp.
- - parsley - for decoration.
Sort out the rice, rinse with water, boil in salted water until ready.
Bake the peppers in the oven at 220 degrees for 10-15 minutes. Then remove the peppers and put them in a plastic bag and leave for 10 minutes. Remove the peel from the peppers, cut it in half lengthwise, remove the seeds.
Rinse the chicken fillet with water, remove the skin, cut into small pieces, salt, sprinkle with curry and leave for 10 minutes. Then fry the meat in vegetable oil on all sides (2-3 minutes).
Cut the olives into rings.
Cooking sauce. Combine olive oil, salt, vinegar and mustard. Stir. The sauce is ready.
Combine rice, olives, peas, chicken fillet.Stir. Season the salad with the sauce. Before serving, put the salad in half the peppers, garnish with greens. The dish is ready!
